NOSE Very intense, alcoholic, sharp, brimming with aromatic esters. Ripe dates, sweet tropical fruit, chocolate and cigar box notes.

TASTE Dry and clean, with a very subdued wine-like influence from the sherry barrels. Raisin raisins, fermented fruit and again high ester intensity, but with a sharp and unsweetened profile, very spicy. Pepper and cinnamon in abundance.

FINISH Spicier and spicier, building in warmth and intensity.

NOTE Aged briefly in the tropics and then in a continental climate with the use of second fill sherry casks, this blend of thicker rum from a 250 year old wooden pot still and lighter rum from a double wooden column still retains all the richness of Demerara sugar cane .
